Another regular lunch or dinner dish in the Little House of Concrete. I tend to use supermarket-sourced bottled chopped chillies, though the equivalent quantity of fresh chopped chillies could, of course, be substituted, and a little chopped flat-leaf parsley adds a nice touch of green.....
INGREDIENTS:
1 tbsp olive oil
1 red salad onion, chopped
1 or 2 large cloves of garlic, crushed
about 150 g chopped bacon
1-2 tsp chopped chilli
400 g tin Italian diced tomatoes
200 g pasta (any variety)
Freshly grated Parmesan or Romano cheese
METHOD: Heat oil in a small saucepan. Add onion and garlic. Cook until onion starts to change colour, then add bacon and chopped chilli. Stir until combined and bacon appears cooked. Add tomatoes and simmer until sauce thickens to a suitable consistency.
Cook pasta according to package directions, drain and place in serving bowls. Add sauce, sprinkle with cheese and serve immediately. Serves two.
